Tranchant is a snapshot of contemporary cuisine, drawn through those who make it, the cooks, and their tool, the knife. One hundred and twenty-eight seasoned professionals and assistants passed, armed with their utensils, through J'Adore ce que vous faites !, the studio set up by Vincent Lappartient and Julien Mignot. In four months, in the middle of lockdown, they photographed and interviewed the chefs. The recurring protocol of the black-and-white portrait and of the hand holding the knife paints a negative portrait of a diverse, mixed and utterly teeming French gastronomy. Tranchant is a culinary and photographic essay that deals with gesture, tool and craft. Sitters: 96 chefs and cooks, 10 baker-pastry cooks, 6 butchers, 6 sommeliers, 3 journalists, 3 authors, 2 blacksmiths, 2 sharpeners, 2 jam makers, 1 pizzaiolo and 1 chocolatier, 132 blades in all.

ABOUT

The project

SpineIndex is an archive of independent books on photography and visual culture: photobooks, publications, design books and self-published editions — the kind of work that rarely makes it into bookshop windows or mainstream catalogues. It exists to document, connect, and keep visible a world of publishers, artists, and makers who operate outside conventional distribution. A living reference for anyone who takes this territory seriously — collectors, researchers, students, and the simply curious.

Images and rights

Covers, interior pages and descriptions are shown to introduce and identify the books, always crediting publisher, author and photographer and linking back to the publisher. We ask publishers for their permission, and we remove anything on request within 7 days. If you are a publisher, an author or a photographer and you want something changed or removed, write to info@spineindex.it.
